Make These Yummy Harvest Moon Pumpkin Bites

Tonight is the night of the Harvest Moon. In fact, the moon went into its full phase at 5:59 a.m. EST in Virginia. Look for the moon to rise in the west at 7:57 p.m. this evening, EST, in Virginia. Cultures all over the world have celebrated this special night for many years, so why not make a home-made treat? These tasty mini-muffins look a little moon-like to me, with their spice-decked white glaze, so I think they are the perfect treat for the full moon tonight.

The recipe is from Halloween Food, Fun and Crafts by Publications International. For this recipe, you will need a 24-cup mini-muffin pan.



  • 3/4 cup canned pumpkin puree
  • 1/2 cup brown sugar, packed
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1-3/4 cup all purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon, divided
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt


  • 1 cup powdered sugar (confectioner’s sugar)
  • 1/3 cup maple syrup
  • 1/4 cup granulated sugar


  1. Preheat oven to 350 deg. F. Grease muffin pan
  2. Combine wet ingredients for muffins, then add dry ingredients (only 1 tsp of te cinnamon), stirring until just combined. Drop by heaping tablespoonfuls into muffin cups.
  3. Bake 12 minutes or until toothpick inserted comes out clean. Cool in pans five minutes then remove to wire rack.
  4. Combine powdered sugar and maple syrup in small bowl and microwave 30 seconds on HIGH. Stir to blend. Dip tops of muffins into syrup mixture and let stand until set.
  5. Combine remaining tsp of cinnamon with granulated sugar and sprinkle on top of glazed muffins.
